對抗腸道致病菌，抑制腸內腐敗

益生菌在腸道進行發酵，分解醣類，產生乳酸或醋酸，使腸內環境保持酸性，因而抑制腐敗菌的增生。

益生菌會消化乳糖及某些種類的纖維質。一些乳糖不耐症患者喝牛奶容易有脹氣、腸胃不舒服等症狀，益生菌可先把乳糖或寡糖分解成小分子，等於把人體難以消化的物質先進一步消化；所以乳糖不耐症的患者喝優酪乳等奶製品比較不會發生腸胃不適等症狀，因為其中所含的益生菌已先降低了奶類本身的乳糖含量，益生菌在腸胃道中生存，又可降低喝其他奶製品時因乳糖產生的不適。

降低血清中的膽固醇濃度

益生菌能使有害的低密度脂蛋白降低，使有益的高密度脂蛋白上升。抑制肝膽固醇生成、促進體內膽固醇的排泄，並藉由益生菌本身的同化作用，將腸道內的膽固醇同化，組成益生菌體的細胞膜或細胞壁內，達到降低膽固醇的效果。

降血壓

經發酵牛奶之蛋白質會被乳酸菌分解成具有抑制 Angiotensin-I Conver-ting Enzyme (ACE)活性的多肽，具有降低血壓的效果。

改善過敏調節免疫功能及提升抵抗力

過敏性疾病是一種免疫疾病，是人體內的免疫功能失調，出現不平衡的狀況。有過敏體質的人，當過敏原進入體內，會誘發身體免疫系統朝第二型T細胞(TH2)免疫反應，T細胞會釋放細胞間白素4、5、9、13，讓免疫B細胞製造更多免疫球蛋白E（IgE），黏附在肥大細胞上，再遇過敏原時，過敏原會黏附在免疫球蛋白E上，共同作用後，肥大細胞會釋放發炎介質，這些發炎介質會影響呼吸道或皮膚產生發炎反應，導致過敏症狀發生。例如：過敏性鼻炎、氣喘、異位性皮膚炎及蕁麻疹等。而人體75%的免疫組織集中在腸胃道附近，維護腸道健康可以減低過敏疾病的發生及強化身體的免疫系統。而部分益生菌能刺激TH1淋巴球分泌珈瑪干擾素，抑制TH2淋巴球的增生與活化，進而緩解過敏症狀，並增強免疫力。[3]

降低幽門螺旋桿菌感染

胃幽門螺旋桿菌容易破壞胃黏膜表層，造成胃發炎等疾病。有體外試驗等研究發現，某些益生菌可在培養皿中抑制胃幽門螺旋桿菌的生長。後來也有人體試驗發現，雷特氏B菌、乳酸桿菌等益生菌，有抑制胃幽門螺旋桿菌的作用。其可能的機轉是，益生菌在腸道中釋放免疫調控物質，經血液到胃部，而抑制了胃幽門螺旋桿菌的生長。也能減少十二指腸潰瘍等消化性潰瘍的發生。 製造維生素，促進鈣吸收
